HAKATA Ramen Bar Case Study

HAKATA Ramen+Bar in Bermondsey Street brings together everything that ramen-ya in Japan is famous for, namely, quality ‘comfort food’, served in a vibrant atmosphere with a friendly and efficient service. Its ground floor, 52-seat restaurant serves over 1500 diners each week and specialises in Tonkotsu ramen offering a range of popular Japanese small dishes to perfectly accompany your meal or to enjoy by yourselves, tapas-style. The basement hosts an Izakaya bar, a low-lit, intimate space offering premium Japanese inspired cocktails, Japanese craft beers, sake, wine, Japanese Whiskys, and other premium spirits. The bar also offers a selection of Japanese bar food. Ramen (wheat-flour noodles served in broth) continues to gain popularity outside of Japan and is now considered to be one of the World’s best loved comfort foods.

Jules Bartlett, Operations Director at HAKATA explains how installing an EauVation system into its restaurant and bar forms part of its overarching business philosophy.

Bespoke system ….

EauVation installed a bespoke undercounter system into HAKATA. With two dispensing points, one in the restaurant and one in the bar in the basement, this system is more sustainable and cost effective as there is only a need for one cooling system which feeds both sets of taps.  The compact system supplies premium quality, chilled, filtered still and sparkling water, to the two sets of stylish bar taps and can be dispensed at the touch of a button.

More space, less stock, more sustainable, less waste …

Installing an EauVation system has given HAKATA more storage space and less stock as the restaurant no longer needs to buy in bottled water.  Plus, it is more sustainable as the system runs from mains water, which means a significant drop in plastic waste and also in water waste.

Bartlett concludes: “We have also been able to reduce our carbon footprint by removing the transportation of the water products we used to buy before we switched to an EauVation system. Serving our EauVation water from beautifully HAKATA branded bottles also adds to the whole customer experience of drinking the delicious tasting water.

Sparkling over still ….

HAKATA offers its customers deliciously chilled still and sparkling purified water alongside tap water. There’s a minimum charge of £1.00 for the purified water and then customers are able to enjoy as many refills as they’d like. Interestingly at HAKATA sales of sparkling filtered water outsell still water by 2:1.
