Water that won’t cost the earth
Sustainability is a key focus for the restaurant group as is reflected in its business ethos, ‘Street food that won’t cost the earth’. From day one, in the first restaurant in Covent Garden, they challenged themselves to minimise the environmental impact of the business – and in fact, in 2016 they were the UK’s first carbon neutral restaurant group and sustainability continues to be built into every element of their restaurants
Jenny Idle, Head of Food Team, explains: “Sustainability in general is a key priority for us; we want to tread as lightly on the planet as possible. That is one of the main reasons why we chose to install EauVation filtered water systems into every one of our 25 sites as well as in our Head Office.
“Across the group we have still/sparkling filtered water taps, which are more sustainable, less wasteful and incur no packaging disposal, doubly important as we have a zero landfill policy. The system is also cheaper and more environmentally friendly than using bottled water”.
At your service …
In each of the restaurants EauVation water is presented in recyclable and reusable glass tequila bottles and is served to customers at their table at the start of their meal by their waiting staff. Water is provided on a complimentary basis with bottomless refills. Jenny adds: “The taps make it far quicker to serve customers as water is readily available at a constant chilled temperature and it gives us equally quick access to sparkling water for our soft drinks, something which our staff are particularly happy about as they don’t have to handle bottles of sparkling water and we don’t have to order or store these separately”.
EauVation’s Medium Remote and Table Top systems have been installed in various sites across the chain and is the perfect alternative to bottled water and can provide large volumes of filtered chilled still and sparkling water for customers to enjoy.
The Table Top system incorporates a high-performance ice-bank refrigerator, dispensing water at consistent temperatures time after time and with its modern, elegant and space saving compact design it ideal where space is at a premium and it sits comfortably on a bar or work top – front or back-of-house, and features in, for example, Wahaca’s Islington, Brixton, St Paul’s and Wimbledon restaurants to name a few.
Whilst the Medium Remote system is a front of house machine too, but the chiller part of the system is placed remotely from the stylish EauVation bar style serving taps that dispense the water at point of service. Some of Wahaca’s larger restaurants including, Bluewater, Canary Wharf, Covent Garden, Brighton and Stratford have this system installed.

EauVation’s Table Top system has also been installed at Wahaca’s Head Office, where it provides staff continuous access to delicious, chilled, filtered water on demand throughout the day. The system also serves the conference rooms with still and sparkling water for when staff and visitors attend meetings – this is freshly served in Wahaca branded reusable bottles, further emphasising their sustainability credentials - an important part of the company’s offering and intrinsic to its business values.
